What's for dinner?

My hunter gatherer made a fabulous dinner today...  After having woken up at 4am this morning (me too!), he made his way out in the world to seek out a nutritious meal.   A couple of hours later and he was back home with 4 huge Snapper for the fridge.  I gave 2 away, put one in the freezer, and proceeded to feast on the remaining fish this evening.  Don't you just love it when hubby provides dinner sometimes?  Well, any more often and it would just upset the space/time continuum!...

How did he do it?  Well...Add some slices of tomato, slices of lemon, lemon juice, sea salt, flat leaf parsley and a drizzle of olive oil - wrap the fish in some foil and bake in the oven for about 30-40  mins (depends on size of fish), or until flesh comes away from the bone.

For a side dish, my favourite, Couscous and Roast Vegetables (beetroot, carrot, pumpkin) and feta.   Place veggies on baking dish and drizzle with olive oil and roast for 30mins or until slightly browned.  Prepare couscous as per packet instructions. Place cooked couscous in large bowl and add roast carrots, pumpkin & beetroot in couscous.  Crumble feta and mix.  The aroma of the feta and the cooked veggies is just divine!  Sometimes I add some toasted pinenuts too....yumm.

Et voila... everyone is happy and very full.




And now I feel like this little darling... sooo tired, and sooo sleepy!  Hope your hunter gatherer goes out and sources dinner for you too soon (if he doesn't already!).
